Green Restaurant Research Team


    The Green Chicago Restaurant Coalition is proud to announce our partnership with the University of Chicago’s Environment, Agriculture and Food working group, and Program on the Global Environment

In an effort aimed at continuing to improve the environmental sustainability of Chicago area restaurants, we are collaborating with the University to help develop user-friendly, environmentally sound and cost-effective green certification standards for foodservice outlets. 

Together, we have crafted the Green Restaurant Research Team; a group made up of expert foodservice industry advisors representing over 25 Chicago-area businesses, leaders from various sustainability-related industries including experts from Green Seal, and University of Chicago faculty, undergraduate and graduate students.

After a two-quarter practicum sequence, the Green Restaurant Research Team will present a set of recommendations from which the Green Chicago Restaurant Coalition seeks to create a template for a certification process that will serve as an accessible and effective tool for greening our Chicago foodservice community, and possibly, the foodservice communities that exist nationwide and around the globe.
